Chocolate Cupcakes

I can't believe it's been almost a week since I've baked anything. I'm going to use sleep deprivation as my excuse. I promised one of the guinea pigs officers that I'd bake him brownies and stop them by last night, but having just come off of the midnight shift, I slept on and off all yesterday and didn't wake up until 1200 hrs today. In an effort to make it up to him, I decided to make some chocolate cupcakes because really, who doesn't like chocolate cupcakes?

Chocolate Cupcakes
Ingredients:
3/4 cups of cocoa powder
3/4 cups of hot water
3 cups of all purpose flour
1 teaspoon baking soda
1 heaping teaspoon baking powder
3/4 teaspoons salt
3 sticks of unsalted butter
2 1/4 cups of sugar
4 large eggs
A generous splash of vanilla extract
1 cup of sour cream
Directions:
1.) Preheat the oven to 350 degrees.
2.) Beat together cocoa and hot water until smooth.
3.) In another bowl, mix together flour, baking soda, baking powder and salt until well combined.
4.) Melt butter and sugar together in a saucepan over low heat, stirring until smooth.
5.) Transfer to a mixing bowl and beat on medium speed until smooth.
6.) Beat in eggs, one at a time.
7.) Add cocoa and beat.
8.) Add vanilla and sour cream and mix well.
9.) On a low speed, beat in the flour mixture. Don't over mix.
10.) Pour into lined muffin tins and bake for approximately 20 minutes.
Notes: The original recipe stated that this made about a dozen cupcakes, which I found to be false. The only way this is true is if it's the jumbo cupcakes. Also, it doesn't state when it mix in the sour cream, so I took it upon myself to add it in with the vanilla. All in all, this recipe is fairly easy to follow and the final result is very yummy and moist. To celebrate Halloween (don't give me that look, it's right around the corner), I bought some white icing and used red and yellow food dye to color it orange.
