Ice Cream Cake and Cookies and Pizza...Oh My!

Tonight is my first night with my new schedule at work, which means my first night with a new set of guinea pigs officers. It's not like I've never worked with them before, but it's always different working with a squad other than your own but I guess we'll all just have to get used to it.

Part of the schedule change means that we no longer have set dispatch partners. Which is good for me, because it means I get to work with two of my very best work friends.

To celebrate, I made an ice cream cake. And cookies. And I made a pizza for lunch.

Ice Cream Cake
Ingredients:
2 sticks melted margarine
2 cups of sugar
4 eggs
1/2 teaspoon salt
1/2 cup of unsweetened cocoa
1 teaspoon vanilla
1 1/4 cups of flour
Caramel Ice Cream Topping
Chocolate Ice Cream Topping
Gallon Of Vanilla Ice Cream
Nuts, optional
Directions:
1.) Preheat oven to 350 degrees.
2.) In a large bowl, whisk melted margarine and sugar together.
3.) Add in eggs and whisk until fluffy.
4.) Add in salt, cocoa and vanilla; stir well.
5.) Add flour.
6.) Stir until mixture is thick and chocolatey.
7.) Pour into well greased 9x13 pan.
8.) Bake at 350 degrees for 28-30 minutes.
9.) Remove brownies from oven, let cool completely.
10.) Once brownies are cooled, spread ice cream evenly over the surface.
11.) Top with chocolate, caramel and nuts as desired.
12.) Place in freezer until you're ready to eat.
Notes: If you don't feel like taking the time to make the brownies from scratch (you're really lazy because they don't take that long), then you can feel free to use brownie mix from a box. That's what I did the very first time I made this cake and it still turned out yummy. Also, if you plan on making this, I prefer the disposable lasagna pans because they're a little bit deeper than the dessert pans that I have!




 
 And that, my Cali Kelley, is how you bake an ice cream cake! Also, because the last batch I made turned out so well, I made some more of the Reese's Chocolate Peanut Butter Chip cookies to take in. Because I'm a suck up.
