Fudge Walnut Brownies

On the eve of what has the potential to be the end of life as I know it at work, I decided to to bake some brownies to calm my nerves. Actually, I decided to bake some brownies because really, who doesn't like brownies? Plus I figured they could be a good bargaining tool tomorrow during my meeting.

Fudge Brownies
Ingredients:
2 sticks melted butter
2 cups of sugar
4 eggs
1/2 teaspoon salt
1/2 cup unsweetened cocoa
1 teaspoon vanilla
1 1/4 cup of flour
1 cup of walnuts
Directions:
1.) Preheat oven to 350 degrees
2.) Grease a 9x13 pan.
3.)Melt the butter in a large bowl.
4.) Add in sugar and whisk together.
5.) Add eggs and whisk until fluffy.
6.) Add salt, cocoa and vanilla; stir well.
7.) Add flour.
8.) Stir until mixture is thick and chocolatey.
9.) Fold in walnuts.
10.) Bake at 350 degrees for 25-30 minutes.
11.) Remove from oven and cool before cutting.
Notes: The recipe originally doesn't call for walnuts, however I was feeling pretty nutty when I made them so I threw a cup in. You can add more or less, or completely omit if you prefer. Also, the recipe will make one pan but my guinea pigs officers are piggies, so I made enough for two.




Not quite sure how tomorrow is going to turn out with the big dispatch meeting, but one thing's for certain: at least we'll have plenty of snacks for the proverbial smack down that I'm sure is coming.

  1. So I'm going to try these "out and out" brownies tonight while I am watching "Emergency". Being an experienced and accomplished baker myself, they look like they will be good. I didn't get any of them at the meeting, need I say more?
