Reese's Chewy Chocolate Peanut Butter Chip Cookies

I'm certain that the universe is out to get me. No, really. I promised myself all weekend that first thing Monday morning, I was going on a diet. It lasted approximately seven hours. What ruined me? A bag of peanut butter chips I found in my cabinet. Being that it was the beginning of the month, I decided to go through my cabinets and get rid of any out-of-dates to make room for new groceries.

The bag of peanut butter chips was screaming my name. Really. They were begging to be baked and who am I to deny them?

Exactly. 

Reese's Chewy Chocolate Peanut Butter Chip Cookies
Ingredients:
2 cups of all-purpose flour
3/4 cups unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups of butter, softened
2 cups of sugar
2 eggs
2 teaspoons vanilla extract
1 2/3 cups (10 oz package) Reese's Peanut Butter Chips
Directions:
1.) Heat oven to 350 degrees.
2.) Stir together flour, cocoa, baking soda and salt.
3.) In a large bowl, beat butter and sugar with a mixer until fluffy.
4.) Add eggs and vanilla to butter mixture.
5.) Gradually add flour mixture, beating well.
6.) Stir in peanut butter chips.
7.) Drop by rounded teaspoons onto ungreased cookie sheet; bake for 8-9 minutes.
8.) Remove from oven. Allow cookies to cool slightly before moving them to wire rack.
Notes: The package notes that it's imperative that cookies are not overbaked. Also, being that I wasn't making these for my guinea pigs officers, I cut the recipe in half. The original recipe states that it makes four and a half dozen cookies.

 
 
 
 
The final product is absolutely delicious. For a minute, I was almost sad that these cookies sabotaged my diet. Until I tasted them. Now I really don't care. There's always next Monday.
