When I found the recipe for Pumpkin Chocolate Chip Cookies, I was a little concerned. Because as much as I love pumpkin and chocolate chip cookies, I usually like them separately. But I figured it was worth a shot.
Pumpkin Chocolate Chip
Ingredients:
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons pumpkin pie spice
1 cup butter, softened
1 cup sugar
2 eggs
1 (16 ounce) can 100% pure pumpkin
1 teaspoon vanilla extract
1 cup chopped walnuts (optional)
1 (12 ounce) bag chocolate chips
Directions:
1.) Preheat Oven to 375 degrees. Grease two cookie sheets.
2.) Mix the flour, baking powder, baking soda, and pumpkin pie spice together in a mixing bowl.
3.) Beat the butter and sugar together in a second mixing bowl until light and fluffy.
4.) Beat in the eggs, one at a time, until smooth and well blended. Mix in the pumpkin and vanilla extract until smooth.
5.) Gradually add in the flour mixture, stirring to make a smooth batter. Stir in the walnuts (optional) and chocolate chips.
6.) Drop by tablespoon-sized spoonfuls on prepared cookie sheets.
7.) Bake until edges are golden, 18 to 20 minutes. Cool briefly before transferring to wire racks to cool completely.
Notes: The recipe says it makes about 24 cookies. I've already baked 24 and I still have plenty of batter left. I'm thinking I'll probably get at least another 12 out of it! Also, don't be concerned about the batter being so difficult to work with. I was expecting to be able to roll the dough into balls and it didn't happen, but that's okay. Also, I used parchment paper to bake them on because I've had such a hard time with cookies in the past and I didn't have any trouble with them sticking.
