New Recipe Tuesday: Oatmeal Scotchies

Okay, I cannot tell a lie. I actually baked this last night. I don't really know why, other than the fact that I was bored out of my mind and wanted something to do. I planned on baking today anyway, but I'm just making Angel Kisses again and as I've already blogged about them, they wouldn't really fall under the New Recipe Tuesday category, now would they? Exactly.
Oatmeal Scotchies
Ingredients:
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup (2 sticks) butter or margarine, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract or grated peel of 1 orange
3 cups quick or old-fashioned oats
1 package Butterscotch chips
Directions:
1.) Preheat the oven to 375 degrees.
2.) Combine flour, baking soda, salt and cinnamon in a small bowl; set aside.
3.) Beat butter, sugars, eggs and vanilla together until well combined.
4.) Gradually beat in the dry mixture, beating well.
5.) Fold in oats and butterscotch chips.
6.) Drop by rounded tablespoons onto ungreased cookie sheets.
7.) Bake for 8-10 minutes.
8.) Remove from oven and cool.
Notes:  This recipe makes about 4 dozen cookies. The batter is really wet when mixed together, and I found that I had to cook them closer to 11 minutes to actually get them all the way done, but they turned out well.

 
 
 
 I'm not really a fan of butterscotch or oatmeal, but combined, these actually make really yummy cookies. I sent some to work last night with one of the guinea pigs officers and they seemed to enjoy it!
