I cheated.

I'm a horrible person. Okay, not really because do you have any idea just how much I've actually baked my guinea pigs officers since I started at this department almost 3 years ago? Huh? DO YOU? Then don't judge me!

One of the guinea pigs officers has a birthday tomorrow and he won't be here. So he asked if I could make him a cheesecake despite the fact that I just made Blondies yesterday. And with me being the amazing baking dispatcher (with the mangled finger) that I am, I agreed.

So what's the problem?

I was really tired today. As in, I only got about four good, solid hours of sleep and the very last thing I wanted to do was make a cheesecake. So my mom made it for me. And I totally passed it off as my own.

Momma's No-Bake Cheesecake
Ingredients:
2 eight (8) oz packages of cream cheese
1/3 cup granulated sugar
1 eight (8) oz tub cool whip
1 nine (9) inch graham cracker pie crust
Directions:
1.) In a large bowl, mix together the softened cream cheese and granulated sugar.
2.) One mixed, add in cool whip.
3.) Spoon into the pie crust.
4.) Place in the refrigerator to set, preferrably at least 2 hours.
5.) Top with favorite fruit and enjoy.


I almost feel bad about this. Almost. The recipe was simple enough that I could have probably sucked it up and made it myself, but did I mention how tired I was? And that I have a mangled finger? Oh I did? My bad.

The part that almost makes me feel the worst about this whole situation? My guinea pigs officers told me that this was probably the best cheesecake they'd ever had.
